Eight summer, light and original salads

Summer is in full swing - it's time to try out new and unusual recipes for fruit salads. Together with Woman's Day we have prepared 11 original and refreshing salads that will surprise you and your loved ones. Stock up on fruits and berries!

Cream salad with grapes and pecans

Crispy pecans, thick cream cheese and a bit of brown sugar make a salad a perfect picnic dish or a garnish at a party.

Ingredients:

  • 900 g of washed and dried black grapes without pits;
  • 450 g of washed and dried white grapes without pits;
  • 170 g soft cheese Honey or 115 g cream cheese;
  • 160 ml of low-fat sour cream;
  • 2 Tbsp. Honey;
  • 1,5 tbsp Sahara;
  • 1 tsp Vanilla extract;
  • 1-2 tbsp. Brown sugar;
  • 95 g of chopped pecans.

Preparation:

In a medium bowl mix the Neuchatel cheese until smooth. Add sour cream, honey, sugar, vanilla extract and mix everything thoroughly.

Salad with watermelon, cucumber and basil

This refreshing recipe combines watermelon and mango with such unusual companions as ginger, lime, parsley and peanuts. It turns out unusually tasty and original!

Ingredients:

  • 1 tbsp soy sauce or tamari sauce;
  • 1 crushed garlic clove;
  • & Frac12; Tsp Crushed ginger;
  • 2 tsp Fresh lime juice;
  • 2 tsp Rice vinegar;
  • 700 ml of watermelon pitted and cut into cubes or balls;
  • 1 long cucumber, cut into semicircles with a thickness of 5 mm;
  • 1 ripe mango without skin, cut into pieces 1 * 1 cm;
  • 1 chili pepper, cut into thin rings;
  • 1 a handful of chopped parsley;
  • 1 a handful of chopped basil;
  • 1 a handful of fried and chopped salted peanuts.

Preparation:

In a large bowl, mix the soy sauce, garlic, ginger, lime juice and rice vinegar.

Add watermelon, cucumber, mango, pepper, parsley and basil. Put in the refrigerator for 30 minutes. Before serving, drain excess liquid and sprinkle with peanuts.

Put the grapes in a salad bowl and add the cheese-sour mixture and & frac34; Nuts. Stir to mix evenly the grapes. Sprinkle the salad with brown sugar and the remaining nuts. Keep in the fridge, serve after a couple of hours.

Salad of blueberries and watermelon with feta cheese and mint

Arrange a picnic with friends and treat them with this salad - unforgettable gastronomic impressions are guaranteed.

Ingredients:

  • 60 ml of olive oil;
  • 30 ml of balsamic vinegar;
  • & Frac12; Tsp Salts;
  • & Frac12; Tsp Ground black pepper;
  • & Frac14; Finely chopped blue bulb;
  • 1 kg of diced watermelon without pits;
  • & Frac12; L fresh blueberries;
  • 1 a handful of large chopped mint;
  • 1 a handful of crumbled feta cheese.

Preparation:

In a large bowl, combine the olive oil, balsamic vinegar, salt, pepper and onions. Add chopped watermelon, blueberries, mint and feta cheese. Gently mix to evenly coat the ingredients.

Winter fruit salad

This colorful salad you can cook even in winter - the products for it are available all year round.

Ingredients:

For the sauce:

  • 3 Tbsp. Fresh lemon juice;
  • 3 tbsp Sahara;
  • 60 ml of olive oil;
  • 60 ml of vegetable oil;
  • 3 Tbsp. Honey;
  • 2 Tbsp. Seeds of poppies.

For salad:

  • 8 tangerines, peeled and peeled;
  • 4 apple (best of all 2 apple varieties Gala and 2 Golden Delicious);
  • 4 ripe kiwi, peeled and chopped;
  • 4 banana, peeled and chopped;
  • 130 g of pomegranate seeds (approximately 1 large garnet).

Preparation:

Filling: In a bowl, whip the lemon juice with sugar until the sugar dissolves. Pour olive oil, vegetable oil, honey and mix well. Add poppy seeds and mix again.

Salad: In a large salad bowl, mix all the fruits, then pour in the dressing and gently mix. Serve immediately.

Fruit salad "Mojito"

Prepare this refreshing salad for the whole family, and for adult gourmets you can add a little rum.

Ingredients:

  • 600 g of watermelon pitted, cut into pieces;
  • 180 g fresh washed blueberries;
  • 170 g fresh raspberry washed or blackberry;
  • 30 g freshly cut strawberries;
  • 1 a handful of finely chopped fresh mint;
  • 60 ml of lime juice;
  • 3 Tbsp. Of powdered sugar.

Preparation:

Put in a large bowl of watermelon, blueberries, raspberries and strawberries. Add the chopped mint.

Dissolve the sugar powder in lemon juice and sprinkle the salad. Slightly mix it and put in the refrigerator for 10-15 minutes. Then place them on the bowls and serve them on the table.

Hawaiian fruit salad

A great way to enjoy the tropics without leaving home.

Ingredients:

  • 80 ml fresh lime juice;
  • 1-2 tsp Honey;
  • & Frac34; Tsp Shredded ginger (fresh or ground);
  • 1,5 l cut fruit and berries (for example, apples, pears, peaches, pineapple, cherries, blueberries, etc.).

Preparation:

In a large bowl, mix lime juice, honey and ginger. Add the cut fruits and berries and mix gently. If you used bananas, then apply immediately.

Iridescent fruit salad with honey and lime

Glad yourself and your loved ones with a rainbow full of vitamins and color.

Ingredients:

  • 500 g freshly cut strawberries;
  • 500 g freshly cut fresh;
  • 180 g fresh blueberries;
  • 180 g of red grapes, cut into halves;
  • 4 ripe kiwi, peeled and cut into slices;
  • 1 can of canned tangerines (merge syrup and cut slices in half);
  • 2 ripe banana, cut into slices.

For the filling:

  • 60 ml of liquid honey;
  • 2 Tbsp. Lime peels (peel with two medium limes);
  • 1 Tbsp. Fresh lime juice.

Preparation:

Put all the fruits in a large bowl. In a small bowl, whip the honey, zest and lime juice. Season the fruit immediately before serving and gently shake the bowl to evenly coat the whole salad with dressing. If you leave the dressed salad for a few minutes, then all the juices will gather at the bottom, so shake the salad again before laying them on the plates.

Dietary fruit salad "Ambrosia"

Greek yogurt makes this rich salad gentle and airy.

Ingredients:

  • 1 can of canned pineapple, cut into pieces (drain liquid);
  • 200 g white grapes;
  • 100 g fresh strawberries, cut into quarters;
  • 100 g blueberries;
  • 1 can of canned mandarin slices (drain liquid);
  • 285 g of Greek yogurt;
  • 2 Tbsp. Brown sugar;
  • & Frac14; Tsp Vanilla.

Preparation:

Gently mix the fruits in a large bowl so as not to crush the pieces of mandarins. In a separate container mix yogurt, sugar and vanilla. Season the salad with a yoghurt mixture and serve.
